As I sit here writing this post with the news on in the background, I can’t help but feel the need to acknowledge the situation going on in Moncton, NB. Wednesday, three RCMP members lost their lives and two others were injured. After a two-day manhunt, literally moments ago, late Thursday night, they have apprehended the suspect. It’s been a sad, stressful day, but that pales in comparison to what the families of the fallen are going through.
We – myself included – often take for granted what these men and women do every day, putting their lives at risk for our own personal safety. You don’t always see them, but they are there working tirelessly day and night to keep our streets, neighborhoods, towns, and cities safe. As an RCMP wife, I’m so proud of what my husband does but at the same time it’s difficult knowing that a typical day involves wearing a bullet proof vest and carrying a gun. You just never know what could happen, things change in the blink of an eye.
I hope the families and people of Moncton can now grieve with some sort of peace in their hearts and begin to put the pieces back together.

This week I wanted to share an awesome recipe that I posted on my Instagram a couple of months ago, I couldn’t wait to make it again. As a food blogger who is always trying new things, it takes a REALLY good recipe to repeat it. This brunch bake is vegan, grain-free, gluten-free, dairy-free but oh so good. It honestly tastes like dessert. Make a batch and you have your breakfast for the week!
